If you have ever been to Texas de Brazil or Fogo de Chao, you will know Pichana. Season and sear both sides in your cast iron skillet, wrap in foil, add some GF butter and let cook for 8 hours in the oven at 250-275. Magic!

OHH LA LA. The mighty flap steak. Part of the bottom sirloin and similar to the skirt this gem is tender, full of flavor and the 2nd love of my life. The flap is part of the bottom sirloin as well and is very similar to the skirt. Marbled thin cuts of fat and muscle separated between layers of fat give this a depth of flavors and are great for marinating.
