Maple Butter Brittle with Brisket Bits

Maple Butter Brittle with Brisket Bits

Recipe by @ashrothstein

MAPLE BUTTER BRITTLE with BRISKET BITS! This brittle is made with maple syrup and butter and is topped with chopped pieces of dried brisket (Carnivore Crisps).

The texture is spot on to classic brittle, and once you bite into it and chew it, it turns into more of a candy-like texture. I’ve tried this recipe with a 2:1 maple syrup/butter ratio (this is the recipe as written...1 cup maple syrup + 1/2 cup butter) and a 1:1 maple syrup/butter ratio (1 cup maple syrup + 1 cup butter).

The recipe as written is more like brittle. The 1:1 ratio comes out a bit softer, but if you prefer a fattier variation, this will work just fine. You may even be able to do 1:2 maple syrup/butter (1/2 cup maple syrup + 1 cup butter).

I’ve never tried it and I’m not sure how the texture would end up, but I think it would work. It would just be much fattier and probably less like brittle.
